A meal that can reward a hard weeks work.

Baked Macaroni and Cheese
 
Serves - 4                                                               Prep. Time - 30 mins
Cooking Utensils - Pot, Oven                                  Cooking time - 15mins 
 
 
Ingredients
 
4 tablespoons butter
1/4 cup flour
1 cup milk
2 cups artisanal cheddar cheese, grated
1/4 teaspoon fresh nutmeg, grated
3/4 cup chorizo, diced
1/4 cup piquillo peppers, julienned (optional)
1/2 cup basil, chopped, loosely packed
salt
white pepper
bread crumbs
extra-virgin olive oil
8 ounces dried macaroni, cooked al dente
 
Method
 
1- Preheat oven to 325F
2- Cook butter and flour in a large pot on very low heat to make it into a roux.
3- Add milk, simmer on medium-low heat for 10 to 15 minutes (mixture will be thick).
4- Add cheddar cheese, slowly, whisking to make sure it melts all the way through.
5- Add nutmeg, salt, white pepper, then fold in macaroni.
6- Remove pot from heat and add chorizo, basil, and peppers.
7- Place in 13x9-inch baking dish.
8-  Cover with bread crumbs and drizzle a little olive oil on top.
9- Bake in preheated 325F oven for 15 minutes or until done and top is golden brown
